General Hospital’s Kathleen Gati Shares A Special Holiday Recipe

Kathleen Gati of General Hospital was recently interviewed by Soap Hub (Liesl Obrecht). We were told by a small birdie that she enjoyed cooking. Who are we kidding, right? We reached out to see if she had a dish she could share with us for the holidays after she held a fan event called Kathleen in the Kitchen with Coastal Entertainment. Here’s the recipe she sent us along with a message to her admirers!

Kathleen Gati’s Savory Corn Muffins

It’s a hit with the audience. While the character is German, Kathleen Gati, the actress who plays her, is from Montreal, Quebec, and was reared by parents of Hungarian heritage. It’s no secret that when Gati isn’t dishing out the drama in Port Charles, she’s in the kitchen whipping up delectable comfort food inspired by her ancestry!

The Story Behind The Corn Muffins

Kathleen Gati: When I was running my Nusi Nasi bakery in Hungary, I did extensive market research on every product. And, with the exception of two items, practically every one of the bakery’s 30 items was a hit. The first was peanut butter cookies, which the Hungarians were unfamiliar with, and the second was corn muffins.

I was so pleased to offer North American delicacies to Hungary, and virtually everything was devoured with gusto, but these two items were ruled out for some reason. My corn muffins, on the other hand, have been well received in the United States! I hope you enjoy these as much as I do. They’re a little sweet, but have a good bite from the spicy Italian spices and corn kernels. I also prefer to top these muffins with shredded cheddar cheese, but it’s entirely up to you!

Kathleen Gati’s Recipe

2 eggs
2/3 cup vegetable oil
1 cup milk (coconut milk works too!)
1/2 cup sugar (or sugar substitute)
1 cup cornmeal, medium grind or cornflour
1 cup flour
2 tsp baking powder
1 Tbsp chopped fresh rosemary
1 Tbsp dried oregano
1 tsp fresh or dried basil
1 tsp thyme
1/2 tsp salt
1 cup drained corn kernels (canned or frozen-optional)
1/2 cup shredded cheddar (or other cheese of choice if desired like parmesan or Swiss. Recommended by Kathleen Gati, but strictly optional)

• Whisk eggs, add oil, milk, and sugar.
• Mix in flour, cornflour, and baking powder.
• Add in the spices and salt.
• Stir in corn and grated cheese.
• Spray muffin pan generously inside and across the top of the pan in case of overflow so the batter won’t stick. Fill each muffin to the top of the pan.
• Bake at 400 F for 15-20 minutes. Makes a dozen medium-sized muffins.
• For mini-muffins, bake at 400 F for 10-15 minutes till look and feel done. Should be bouncy, but does not need to look golden to be done. • Of course all ovens are different, so keep an eyeball on your muffins.
